I know that when it comes to powders and primers. But how about wads I am looking at some loads for 16 gauge. And some call for the z16 and some for the sg16. Can you sub? Or can it change it up too much?

A wad is the whole deal in Shotgun loading... you cant sub them, its a different load. The difference in those two is a significant stiffness which will instantly affect pressures.
